Well, I survived my camping trip this weekend, albeit a little worn and tattered (but that which does not kill you, right?).
Just as I had suspected, “Heidi” and “Camping” are two words that do not belong in the same sentence! Here are just a few words/phases that highlight my weekend: wolves, animal bones, dead snake, melted basketball shorts, BB’s, freezing cold, rain, injured child, sleep deprivation, injured mom, 3 am port-a-potty catastrophe and exploding rocks (fire can do that).
Yes, we all made it home alive (although I think Mike were wishing otherwise…I may have had a tiny meltdown). I, or rather, Mike, will share the details later.
Once they’ve had a chance to become funny. 😉
Monday: Chili Dogs (growing up, my mom never made chili dogs on a bun, instead, she served homemade chili con carne in a bowl with cut up hot dogs as the garnish…naturally gluten/grain-free!) and Fruit Salad
Tuesday: Grilled Chicken, Baked Sweet Potatoes and Tomato Slices
Wednesday: Homemade Hamburger Helper, Steamed Broccoli and Fresh Peaches
Thursday: Ham and Potato Soup (I will use coconut oil instead of butter, So Delicious Unsweetened Coconut Milk and I will puree half of the mixture to use as the thickener instead of using flour) and Green Salad
Friday: Slowcooker Ribs n’ Kraut (I’ll use Bubbies Sauerkraut) and Homemade Sugar-Free Applesauce
Saturday: Everyday Paleo Cabbage Rolls and Fruit Salad
Sunday: Slowcooker Hearty Beef Stew

Yay! You survived! The next trip will be easier. 😉 Good for you for trying something out of your comfort zone.
I'm wondering how long it wil take for the trip to be funny … that sure sounds like a lot of catastrophes, dahling! 😉 Glad you all survived!!!
