It’s been a crazy day so this is going to be a quick post! 😀
Meatless Monday:
Raw Zucchini Pasta in a Vegan Curry Cream Sauce, Fresh Tomato, Cucumber and Watermelon Slices
Tuesday:
Grilled Chicken, Bell Pepper Salad and Creamy Cucumber Salad
Wednesday:
Grilled Filet Mignon with a Red Wine Balsamic Reduction (I will use coconut oil instead of butter to make it dairy-free), Roasted Sweet Potatoes and Green Bean Salad
Thursday:
Smoked Salmon with Lemon-Caper Sauce (I’ll use my smoker and just season the salmon with salt and pepper, no sugar), Grilled Summer Squash, Green Salad
Friday:
Chicken on a Stick (I’m going to make the marinade in my Vitamix using coconut oil instead of canola, Braggs Liquid Aminos instead of the soy sauce – use Coconut Aminos for soy allergies – and 2 soaked whole dates instead of the honey), Green Salad and Grilled Pineapple Sticks.
Saturday:
Kickin’ Chicken Soup (recipe to come) and Green Salad
Sunday:
Bacon, Mayo and Tomato Sandwiches (sans the bread for me: think garden fresh beefsteak tomato slices with crumbled bacon and a mayo dressing….I’ll be sure to take a photo, it’s really quite delicious!), Oven Baked French Fries with Corn-Free Ketchup
Yummmmy, Heidi girl! I love how you tell how you are going to adapt recipes to meet your dairy-free, soy-free, etc. needs. It shows folks it's not hard at all to make those changes. 🙂

Thanks Shirley! I refuse to be bound to specialty cookbooks for the rest of my life (and I really don't have room for anymore in my house, LOL!). Figuring out how to make appropriate substitutions is the key to freedom and happiness in this lifestyle (well, in my opinion anyway). It has taken me a long time (and a lot of trial and error) to feel comfortable making substitutions on a whim so hopefully, I can help someone else get there a little faster than I did. 😀
