I love Green Chile Stew and I cannot think of a better soup to warm you up on a cold, dreary winter day. And the green chile is great for clearing out the sinuses!
This recipe for Green Chile Stew comes from my father-in-law, Jim…he’s a bonafide soup master. 😀
Ingredients
- 2 Lbs. Pork Stew Meat
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 2 Tbs. Oil
- 3 Potatoes, diced
- 1 large can Diced Tomatoes (I use a 26 oz. box of Pomi Chopped Tomatoes)
- 2 cans Pinto Beans (Eden Foods canned beans come in a BPA-Free can)
- 1 cup Green Chiles, chopped (see note below)
- 8 cups Beef Stock (I use Kitchen Basics)
- 1 tsp. dried Oregano
- Salt and Pepper, to taste
Directions
- In a large skillet, brown the pork stew meat in oil over medium-high heat (I use expeller pressed coconut oil because it is safe for high-heat applications and doesn't take like coconut).
- Add onions and cook until translucent.
- Add garlic and cook for just a minute more (be careful not to burn the garlic).
- Transfer pork, onions and garlic to a 6-qt. slowcooker.
- Add beef stock, potatoes, tomatoes, beans, green chiles and oregano.
- Taste the stew, add salt and pepper if desired. If the stew isn't spicy enough, add more green chile!
- Set the slowcooker to low and cook stew for 6 - 8 hours.
- Serve!
Notes
I happen to live in New Mexico, land of the chile pepper, so it's easy to come by in these parts. In fact, I have a freezer full of it.
