Slowcooker Green Chile Stew (and Home for the Holidays Giveaway Winners)

Gluten Free Green Chile Stew, Slowcooker Green Chile Stew

I love Green Chile Stew and I cannot think of a better soup to warm you up on a cold, dreary winter day.  And the green chile is great for clearing out the sinuses!

This recipe for Green Chile Stew comes from my father-in-law, Jim…he’s a bonafide soup master. 😀

Slowcooker Green Chile Stew

Prep Time: 20 minutes

Cook Time: PT6 - 8H

Serves: Serves 6

Slowcooker Green Chile Stew

  • 2 Lbs. Pork Stew Meat
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 Tbs. Oil
  • 3 Potatoes, diced
  • 1 large can Diced Tomatoes (I use a 26 oz. box of Pomi Chopped Tomatoes)
  • 2 cans Pinto Beans (Eden Foods canned beans come in a BPA-Free can)
  • 1 cup Green Chiles, chopped (see note below)
  • 8 cups Beef Stock (I use Kitchen Basics)
  • 1 tsp. dried Oregano
  • Salt and Pepper, to taste

  1. In a large skillet, brown the pork stew meat in oil over medium-high heat (I use expeller pressed coconut oil because it is safe for high-heat applications and doesn't take like coconut).
  2. Add onions and cook until translucent.
  3. Add garlic and cook for just a minute more (be careful not to burn the garlic).
  4. Transfer pork, onions and garlic to a 6-qt. slowcooker.
  5. Add beef stock, potatoes, tomatoes, beans, green chiles and oregano.
  6. Taste the stew, add salt and pepper if desired. If the stew isn't spicy enough, add more green chile!
  7. Set the slowcooker to low and cook stew for 6 - 8 hours.
  8. Serve!

I happen to live in New Mexico, land of the chile pepper, so it's easy to come by in these parts. In fact, I have a freezer full of it. If you have difficulty finding green chile where you live, you can always roast your own and Karina shares some information about chile roasting over at Gluten Free Goddess.
