Monday: Minestrone (I’ll set aside some of the soup for myself before I add the gluten-free pasta for my guys) and salad with dairy-free Ranch dressing
Tuesday: Sea Bass with Mediterranean Sauce
Wednesday: Pork with Apples, Calvados and Apple Cider (I will use coconut oil instead of the butter and canned coconut milk in place of the whipping cream – So Delicious Original Coffee Creamer also works very well), Salad with Green Apple Salad Dressing (this recipe is free of both vinegar and citrus, so it’s perfect for those on an elimination diet).
Thursday: Grilled Chicken and Red Onions, Baked Sweet Potatoes with Mattie’s Homemade Vegan Butter and Cinnamon (This “butter” is AWESOME! Of course, I had to make a few tweaks for our family – no soy or corn byproducts – and I will share those in an upcoming blog post)
Friday: Salmon with Lemon, Capers and Rosemary, Grilled Zucchini and Salad with Dairy-Free Green Goddess Dressing.
Saturday: Pepper Crusted Grilled-Roasted Beef with Rosemary Chimichurri, Grilled Yukon Gold Potatoes with Onions and Garlic, Salad
Sunday: Slow Cooker White Bean and Chicken Chili and Fruit Salad

You have TWO things on your menu this week that I am making as well~ salmon and white chicken chili! Great minds think a like. I also roasted pumpkins for puree and will be roasting the seeds.
