And no, this is not a recipe!
A couple of weeks ago while I was surfing the net looking for a recipe to make my own GF pitas, I came across the Gluten Free Pita website. I got so excited that I almost fell off my chair! I contacted GFL Foods to see if they would be interested in sending out a sample for me to review on my blog. Rami, the creator of the gluten free pita and founder of the company so graciously sent me a complimentary package of GF pitas to review. I do not have a personal connection to GFL Foods nor have I received monetary compensation to write a favorable review. (Sorry, I forgot to comply with the new FTC regulations on bloggers reviewing products on their websites, takes some time for me to develop new habits!)
Imagine Falafel, Gyros, Souvlaki, Tzatziki, Hummus, and Baba Ghannouj, all accompanied with real pita bread. Yes, they are gluten free but they taste very close to the real thing!
Ahhh… the memories I have of Flaming Kasseri Cheese at one of my favorite Albuquerque Greek restaurants, Yanni’s Mediterranean Grill and Opa Bar. Somehow, it is just not the same with cucumber slices!
Pitas, the pocket bread that was always fun to make stuffed PB& J sandwiches, pita pizzas or one of my favorite ways, stuffed with chicken salad.

The Ingredients:
Rice Flour, Corn Starch Flour, Yeast, Salt, Sugar, Xanthan Gum, Cellulose Gum, Canola Oil, Apple Cider.

I was especially impressed when I opened the bag and was greeted with the most pleasant "fresh baked" aroma of something hot from the oven.

The magic number for this GF pita is 40 seconds. From the freezer to the pocket you see above (sorry, my picture doesn't do it justice. It is difficult to hold a pita in the pocket shape while managing a camera with the other!) is a mere 40 seconds in the microwave.

The pita is very sturdy and does not fall apart when stretched and stuffed to the max (and then some)!

I kept expecting the pita to fall apart under the weight and and moisture of the chicken salad, but it held up perfectly!
I made this pita sandwich last night and Mike took it to work today for lunch. He said that the pita was the exact same as I had assembled it 15 hours later!
Overall, this GF pita bread earned a huge thumbs up from us!
