1 in 133: A Very Big Deal with A Very Big Cake!

When my dear friend Shirley from Gluten Free Easily first told me about the 1 in 133 project, I literally got goosebumps from head to toe.

This is a bonafide gluten-free movement my friends, one that each and every one of us has a very important role to play.

So what is 1 in 133, you ask?

Besides the fact that 1 in 133 is the estimated number of Americans living with celiac disease (97% of which remain undiagnosed), 1 in 133 is also the catchy name for the first Gluten Free Food Labeling Summit, which will be held in Washington, D.C. on May 4th, 2011.

In 2007, the Food Allergen Labeling and Consumer Protection Act (FALCPA) tasked the Food and Drug Administration (FDA) to finalize standards for gluten-free labeling.

Four years later, the FDA has failed to fulfill that mandate.  To the millions of Americans who eat gluten-free food, this inaction is a big deal. (To continue reading, please visit 1in133.org).

Here are some of the ways in which you can help:

  • You can Send a Letter to the FDA (this is super simple, the folks that put the 1 in 133 project together have already done most of the work for you, all you need to do is fill out your information).
  • Follow 1 in 133 on Twitter and start tweeting!

If you or a loved one needs to eat a gluten-free diet, whether it’s due to celiac disease, non-celiac gluten sensitivity, autism or any other health reason, please consider getting involved, every bit helps…and millions of people will thank you for it.

Oh, did I mention that there will be cake?  How about THE WORLD’S LARGEST GLUTEN-FREE CAKE? :-D

    I'm so glad to see that you've devoted a post to this most important cause. I have joined up and will do my part to bring awareness of it to others. We can only hope and pray that the people who make the labeling decisions truly understand how vital this is to the health and well-being of those of us who must diligently follow a gluten free diet, or as I like to call it, way of lie.
