Dinner is the most difficult meal for my family. We had an eye opening experience with my husband being diagnosed with Celiacs and in all the research we have done I am in the process of having our whole family be gluten free. At times this is very overwheling trying to understand all there is to know and provide nutritious and delicious meals for the family, that are also kid approved.

The most difficult meal for me is lunch. It's difficult to meet all the allergy requirement for my 15 year old daughter, and her still enjoy her lunch! I guess in High School it's not cool to have "weird" stuff in your lunch! She has some major health issues, and we are avoiding red meat, pork, soy, corn, sugar, gluten, and dairy! I was thrilled when I saw the opportunity to see lunchbox ideas for kids!
