Dairy-Free, Egg-Free, Gluten-Free & Soy-Free Chocolate Pudding

For this chocolate pudding, I pretty much merged two recipes I found online: a recipe for Homemade Vanilla Pudding that I found on allrecipes.com and Tyler Florence’s recipe for Chocolate Pudding which I found on FoodNetwork.com.  I then made my dairy-free substitutions and finished with MimicCreme Healthy Top Whipped Cream! 😀

Ingredients

2 cups Milk (I used MimicCreme, the Sweetened version).

1/2 cup White Sugar (I used 1/3 cup of Stevia Extract In The Raw, which is a cup-for-cup sugar replacement, but I have found that using a little less suits my taste better).

1/3 cup Cocoa Powder

3 Tbs. Cornstarch (I used Arrowroot).

1/4 tsp. Salt (I used Celtic Sea Salt by Eden Foods.  This is an unrefined sea salt which still contains many natural trace minerals.  However, it does not contain any Iodine).

2 tsp. Vanilla Extract

1 Tbs. Butter (I used Dairy-Free Earth Balance)

Directions

  • In medium saucepan over medium heat, heat 1 1/2 cups of the MimicCreme until bubbles form at edges.
  • In a separate bowl, combine sugar, cocoa powder, cornstarch (or arrowroot), salt and remaining 1/2 cup of MimicCreme.  Whisk until smooth.
  • Pour into hot MimicCreme mixture, a little at a time, stirring to dissolve.
  • Continue to cook and stir until mixture thickens enough to coat the back of a metal spoon.  Do not boil.
  • Remove from heat, stir in vanilla and dairy-free butter substitute.
  • Pour into serving dishes.  (To prevent a skin from forming on the pudding, I pour the warm pudding into one medium-sized glass bowl then cover with plastic wrap, having the plastic wrap touch the surface of the pudding).
  • Chill before serving.

    This pudding, though, wow. It looks absolutely picture-perfect, if you will. I've got to find Mimicreme, but I wonder if, in the meantime, it would work well with coconut milk. Plus, the 'whipped cream' is incredible. It's fabulous that this recipe worked so well, even with your substitutions! Well done!

      I *think* the pudding would probably turn out best with canned coconut milk (vs. So Delicious). I have discovered this several times by accident when I read a blogger's recipe that calls for coconut milk and I use So Delicious (only to have the recipe flop and I go back and read that the blogger actually used canned coconut milk). I think they are completely different products.

      I don't use the canned coconut milk because I don't care for the taste of coconut (this also keeps me from using coconut oil). I do like coconut flour and the So Delicious coconut products though (if that helps any other non-coconut fans out there)! 😉

    This looks great! I was so inspired, I went to Amazon to pick up some Mimicreme. I'm going to give dairy free a go for a month and see if I notice any difference.

    Am I weird that I actually like the "skin" on the top of the pudding? I eat it first!

      If you're weird, then so am I (well, we already established that I think, LOL!), I like the skin too! Hope you like the MimicCreme as much as I do, I am inching towards going dairy-free as well, but I decided to put it off until I get my iron under control. Calcium is a good iron inhibitor, so I am sticking with my Greek yogurt for a while (I am losing so many other foods b/c of my high iron, I don't want to add more)! xo

  4. Looks really good… like tempting good. I wish I could try it, but the MimicCream is made from nuts. The other slight problem I have with the recipe is the "butter". You said you use earth-ballance dairy free 'butter', however it's flavor is naturally derived from corn… so I can't have it as it does contain corn.

    Besides that though, I'd love to try the recipe some day. Thanks for sharing.

      Thank you for pointing that out to me (about the Earth Balance). I did not even check the ingredients of the butter (shame on me), I was going strictly off the arrowroot substitution when I listed it as corn-free. A couple corn-free options: Isn't Canoleo corn-free? I also think this would work really well just using Spectrum Shortening in place of the Earth Balance, but then there is still the tree-nut issue to deal with. I will have to keep experimenting, there has to be something!! 😀

      • Oh, thanks for mentioning the Spectrum Shortening! I wasn't aware of that one. I should be fine with it as it's not in the nut catigory. The Canoleo though, yes is corn free, but it contains flavor derived from dairy. This is something I'll have to keep thinking about in how I can tweak it so I can have it (tweaking and playing with recipes is something I really enjoy doing, hence my blog) in the future. Thanks for the inspiration and ideas!

    I have a Chocolate Mousse that I think you would enjoy! It has 1 Tblsp of butter in it but it is totally dairy free without it. It also has no added sugar except for what is in the chocolate. It is heavenly! I also just perfected a Dairy Free Chocolate Ice Cream. Mmm- chocolate!

  9. I looked up MimicCreme, the sweetened version, and it is not corn free as it says that it contains maltodextrin. The unsweetened version is corn free, can you use that instead?

    • Liz, thanks for pointing that out (this is the second ingredient that I have been caught unaware for hidden corn!). Yes you can use the unsweetened MimicCreme, no problem. If you can give me a few days, I will tinker with the recipe using the unsweetened version to see if any added sweetener will be needed, and I will report back!

      Do you happen to have a good resource for all the hidden sources of corn (we don't have a corn allergy/intolerance, although I would like to add that to my list of grains to begin eliminating in the near future)? 😀

      I now make my own vanilla extract so it is definitely corn-free! 😀

      Shirley from Gluten Free Easily has a recipe for homemade vanilla extract and you can use whatever alcohol you want. I made some recently with Ciroc Vodka which is distilled from grapes. You can read my post about it here.

      • Fabulous! I'll try that. I just found out xanthan gum is corn-based. I can't believe I never knew that. I love the Food for Life gluten-free rice tortillas, one of the few processed foods I eat. They said their supplier guarantees there is no corn protein or allergens. But I think I'm going to have to figure out a way to make my own "bread" products, gluten-free, dairy-free, corn-free, and nightshade-free. Sheesh. Thanks!

  12.  Despite the goofs with the corn, I just wanted to say I LOVE you! lol Is it ok for me to say that? You blog is going to be such a HUGE help to us.
    My son has been GFCF for over a year, but is now also soy and corn free. So many great recipes here. I can’t wait to try them. 🙂
