Gluten Free Rice “Krispie” Treats

I don’t about you, but ever since going gluten-free, Rice Crispy Treats have just not been the same since Kellogg’s Rice Krispies “left the pantry.” While there are some really good GF Rice cereals out there, the famous marshmallow treat of my past just wasn’t the same, “something” seemed to be missing. I presume it was the very thing that made Rice Krispies off limits to me and my family in the first place, the malt flavoring. When General Mills’ Rice Chex went GF, I got a tip from one of my GF web forums that Rice Chex worked so well that outside of the shape, they tasted identical to Rice Krispie Treats. Wow, that was good enough for me!

Then Sam started Kindergarten. Sam’s school has a really cool “cooking class,” called Friday Fun. Each week all of the kindergartners make a snack on Friday. The kiddos do the non-cooking portion like shaping and molding and assembly, while the teachers and aids do all things related to “fire.” Anyway, back in the fall one of the Friday Fun snacks was to make a Rice Krispie Treat Cactus. That threw a wrench in my Rice Chex Treats, as they are not as easy to mold into funny little shapes and I could tell Sam really wanted his cactus to look like his classmates anyway. Sam doesn’t mind how foods look at home but he is becoming increasingly aware and sensitive about being “different” around his peers. Sam and I talk about his feelings and how it is our differences that make us all special. I think (hope) he gets it, but I also get how it feels to be 6!

So back to the drawing board!

Sam’s school is absolutely wonderful in all that they do to make sure Sam is safe and always included. Every Monday I get the recipe for Friday’s Fun Snack so I can send in Sam’s own uncontaminated ingredients/pots/pans/utensils, etc. So the Monday that I got the recipe, off to Whole Foods I went. I purchased the two GF rice cereals they had in stock. One by Nature’s Path and the other by Erewhon.

I poured some of each cereal onto a plate and gave it a good once over, looking for one with any Rice Krispies type “appearance”:

Natures Path...........................................................................................Erewhon

On appearance alone, I went with the Erewhon GF Crispy Brown Rice Cereal. I started to get out all of the other ingredients and even though I have the recipe memorized, I decided to take a look on the back of the Great Value (Walmart) brand of mini marshmallows that I had on hand. There it was. An ingredient in their recipe that was different from the recipe that I have always used: vanilla. Sometimes it can be hard to try something new, but I figured that I had nothing to lose and potentially everything to gain…

It was as if the giant marshmallows in the sky parted and let the sun shine down on R.E.A.L. (GF) Rice Crispy Treats! 😀

Gluten Free Classic Rice Crispy Treats

1/4 cup Butter or Margarine (I used Smart Balance, but you could also use Earth Balance Non-Dairy Buttery Spread or Sticks)

1 pkg. (10 1/2-oz.) Miniature Marshmallows

6 cups Erewhon GF Crispy Brown Rice Cereal

1 tsp. Vanilla

  • Grease a 13 x 9 inch pan
  • Melt butter over low heat in a large pan.
  • Add marshmallows to melted butter and stir over low heat until melted. Remove pan from heat. Stir in vanilla extract.
  • Stir in rice cereal and gently coat cereal with marshmallow mixture.
  • Pour rice mixture into prepared pan. With buttered fingers press the mixture flat.

Yummy, just like old times...

You can even make snowmen!

Glutino Pretzel Sticks for arms and Jelly Belly's cut into snowman eyes, nose and buttons. The boys got a kick out of these!

The scarves are made out of All Natural Fruit Rollups called Simply Fruit.

      I am running out of room to hide all of this sugar from Sam and Luke before I can package everything up for gifts! They don't usually get many sugary treats with all of the artificial food colorings and I can really see the effect in Luke! 🙂 It has really proven to me on a personal level how the chemicals, etc. in processed foods are affecting so many kids, and adults alike. Blows my mind!

      Wonder how Brussels Sprouts Goldfish would go over?! 😉

  4. My friend is gluten-free and I wanted to make her these, but she has had a bad reaction to marshmallows before (some are rolled in a flour/cornstarch mixture)…anything I can use to subsitute?

      Before I can think of a substitute suggestion for you, can you tell me if it is corn that your friend cannot tolerate, or something else?

        Corn is ok, she is intolerant to gluten – so it was flour that set it off. I've never made rice krispie treats with non-generic marshmallows, but would love to see if it works!

          I use Walmart's brand (Great Value) marshmallows. The bag says 'gluten-free' on the front and there are no artificial colors in them (I avoid those by choice). I hope that helps! 😀

          • Hi–I know this was posted a while ago, but homemade marshmallows are fabulous AND very easy to make–you can check out Martha Stewart's recipe on line (she has two recipes, one makes a smaller batch). Only caveat: you need a stand mixer as they have to whip for 8-12 minutes, though if you make the small batch and have a strong arm an electric hand mixer may do the trick.. If you make the larger batch you definitely need the large bowl and abilility of the stand mixer to mix a large amount. Another great resource for marshmallows is MARSHMALLOWS, Homemade Gourmet Treats by Eileen Talanian. = )

I too have been looking for GF rice crispies and I found out that Erewhon company said they produce their RC's on the same machines they produce oats on… if your son is sensitive to what is in (non-gf) oats this might be a problem. Have you had any experience with that? We have to use GF oats, so Erewhon is out. 🙁 I'll check the other one you mentioned.

      Thanks for the heads up about the potential of cross contamination, such an important issue!

      I have not had a problem with the Erewhon rice cereal, but that doesn't say much because I don't experience any obvious symptoms when 'glutened.' Because they are not certified gluten-free though, I only use them as a very occasional treat, maybe twice a year (my kids don't care for them as breakfast cereal). Ya know, that gives me an idea! I wonder how they would taste with Enjoy Life Foods Nutty Rice cereal?

  7. Those snowmen are too freakin' cute! Thanks for the post — I was thinking of making some kind of Rice Krispie Treat for my boyfriend's sister, who has celiac, and I assumed Rice Krispies were GF. I'll just pop over to the health food store and get some GF cereal instead.

  9. I found your recipe after I found another brand (Arrowhead) rice puff and thought-must make rice krispie treats for my kids (they have never had them-SHUDDER : ) Just waiting for them to set..it is going to be a Merry Christmas! Thanks for your recipe-it helped out!

  10. My daughter is a celiac and we recently found out that she can't have margarine and your rice crispy treats call for margarine(or butter)just thought we would let you know 🙂

      I made that post a year ago, long before we were dairy-free. You can use Earth Balance instead of the butter, because it's dairy-free. If there is a soy allergy, EB makes a soy-free version too. I also think Coconut Oil would work great in this recipe, especially for those allergic to corn (which I just discovered that I am). I haven't tried making these with homemade marshmallows yet, but I just discovered a recipe for corn-free, egg-free Marshmallows.

  11. These are awesome treats! When I made these, I didn't use grease on my hands when packing, I just dipped my hands in cold water 43 or 4 times and the marsh mellow didn't stick at all. That would be the only change I would make to the directions.

  12. Great recipe, and I used 4 cups Erewhon and 2 cups Koala Krisp to mix it up a bit, delicious! Don't forget to butter your hands when patting krispies into pan:)

  14. Thank you so much for the website and rice krispy treat recipe!!! I am helping a friend do a bake sale in a few weeks for kid's with cancer. And she was wanting to do treats to sell for gluten free kids and adults. I told her I would find something and was already planning on doing treats with regular rice cereal glad I could find a simple way to make them gluten free as well!!! I did have a question though the recipe I'm doing has the treats molded into Easter eggs with candy in the middle of the eggs is there any kind of kid friendly candy that is gluten free? I was going to put gummy bears and m and m's in the others would those work in the gluten free?

  15. Thanks for this information. I make and decorate cakes and my cousin has asked me to make a cake for her son (wall E). This must be gluten free and dairy free (both for my aunt and I am dairy free), so I was searching for a gluten free rice crispie treat recipe (I am making the "head" and "gears" out of rice crispie treats that I will carve and either ice or use some homemade fondant to cover). I really appreciate this site and will visit often as I bake gluten free much of the time. Thanks again!!
