Gluten-Free Margarita Cheesecake

Also known as “Happy Cheesecake” around our house! This is not a dessert to be shared with the kiddos since it is a no-bake cheesecake and therefore the alcohol is not “cooked out,” but it is a great cheesecake to take to a holiday party, “mom’s night” gathering or even to share with your hubby when the kids go to bed! 😉

No-Bake Margarita Cheesecake (my friend Kristen gave me this recipe and I am not sure of the original source).

Crust:
1 1/4 cup finely crushed Pretzels (I used Glutino GF Pretzels)
1/3 cup Butter, melted (I used Smart Balance but you could also use a dairy-free/vegan butter substitute)
1/4 cup Sugar

Filling:
1 8 oz. package Cream Cheese (I used Low Fat Cream Cheese, or you could use Tofutti Cream Cheese, or Vegan Gourmet Cream Cheese)
1-14 oz. can Sweetened Condensed Milk (here are some recipes to make your own Dairy-Free Sweetened Condensed Milk)
1/4 cup Lime Juice
(I used fresh Limes)
1/4 cup Tequila
1/4 cup Triple Sec
3 drops of Green Food Coloring (optional)
1-4 oz. container Non-Dairy Whipped Topping (here is a yummy looking vegan, soy-free whipped cream recipe!)

  • Combine the pretzel crumbs, melted butter, and sugar until crumbly.  Press into the bottom and sides of a 9 inch pie plate. (The recipe doesn’t call for it, but I baked my crust in a 400° F. oven for about 10 minutes).
  • In a large mixing bowl, beat the cream cheese until fluffy.  Gradually beat in the sweetened condensed milk, lime juice, Tequila, Triple Sec, and optional green food coloring. (I grated in some fresh Lime Zest for an added punch).
  • Fold in the whipped topping and pour into the prepared pie plate.
  • Freeze 4 hours or until firm.

This was really good! Be forewarned though, (especially if you are a lightweight like me)…I had a piece of this the night I made Tie-Dye Goldfish crackers! Seriously, looking at that post now, it all makes sense. 😀 LOL!
