Udi’s Gluten Free Blueberry Muffins

Yummy.
These are wonderful blueberry muffins, although I think they are a bit more like blueberry “cupcakes”.
This light and airy muffin with an extremely moist crumb (no nuking or toasting required) that encased the big, plump and juicy blueberries seemed more “cupcakey” in texture than the blueberry muffins I remember growing up.  My mom always made blueberry muffins from a Bisquick recipe so maybe that is why.  I loved my mom’s muffins, but always enjoyed them chased with a tall cold glass of milk to wash them down.  Udi’s Blueberry Muffins were accompanied perfectly with a nice hot cup of joe, no chugging required
.

A few more blueberries would be nice though, but this is just a personal preference.

Sales thought** I think Udi’s and Starbucks should form a union.  If these muffins (plus the Lemon Streusel muffins that I will post on tomorrow) could be individually wrapped and sealed at Udi’s (therefore preventing cross contamination) and shipped out to Starbucks (even hotels, airlines, etc.) across the country and stored in the freezer until needed…  lightbulb!
A quick note on where to find Udi’s GF Products, I will quote the press release I received from Udi’s, dated June 2009:
Udi’s Gluten Free Foods were recently showcased at IDDBA and the
Natural Products Expo, and will be featured at next week’s Fancy Food Show in
New York City. The products are currently on the shelf, or about to be sold in
Colorado, Texas, Minnesota, Utah, Kansas and New Mexico at top grocery chains
such as Whole Foods, King Soopers, Vitamin Cottage, Kowalski’s Markets, Lung
& Byerly’s, United Supermarkets and Central Market.
The gluten free products should be available nationwide by late
2009. Udi’s plans to expand the gluten free line in the near future to include
cookies, cinnamon rolls, bagels, pie crusts and cake layers.
